The culinary traditions of Guanzhong are rich and varied.
As the capital for generations, chefs from all over the country gathered in Chang'an, bringing with them the best of the land's delicacies. The variety of dishes is vast, and the preparation methods are meticulous.
Staples include noodle soup, flatbread, and Black Rice, which is soaked in juice from the "nan zhu" plant, steamed and dried nine times, resulting in small, jet-black grains that strengthen the body and improve the complexion with long-term consumption.
There's also Oily Broth Rice, which has over a dozen ingredients. Breeze-Cooled Rice is refreshing and cool, while Jade Well Porridge is served with steamed lotus root. Other dishes include Soy-Infused Wheat Noodles and Jade Cherry Dumplings (bì luó).
The preparation methods for various meats—pork, lamb, beef, and horse—are equally diverse. Although the capital has moved north, some traditions have continued.
