Flying to the cart tracks, he did not use the carts but instead flew directly along the tracks toward the underground vaults.
Ordinary thieves would need to use the carts to reach the underground vaults, and the Flying Charm is a rare spell. Using the carts would inevitably alert the goblin guards, which is why Gringotts built the vaults deep underground.
